Day after Easter


How was your Easter? Did you have an egg hunt or eat chocolate bunnies? My day was punctuated with sharing good food with friends and family.

Shawn and I started the morning early by walking down to Lovejoy Bakers. Love this place – great pastries and food, fun atmosphere, and free wi-fi. We sat inside with our iPads and nibbled on pastries.

What better way to spend a cloudy morning?

Later, we met our friends Jenny and Jason for lunch/brunch at Huber’s.

And for dinner we went over to my aunt and uncles for a big family gathering.

And what did I bring? The cake! And not just any cake, a REALLY moist, yummy chocolate cake with buttery-chocolate frosting! Literally the cake was devoured down to half of a small slice! :) And what delicious recipe did I use? Ha it was from a box! Trader Joe’s Chocolate Cake Mix and Chocolate Frosting Mix. I made the cake as directed. The frosting I made my own adjustments (below). Try it – you’ll love it!

Buttery-Chocolate Frosting

1 package Trader Joe’s Chocolate Frosting
1 1/2 cubes butter, melted
A few tablespoons whole milk
About 1/2-3/4 c. powdered sugar

Blend butter and frosting mix. Add milk. Then add powdered sugar until desired consistency is reached (fluffy and easy to spread).
