The potato latkes I made a while back were so good. I was in the mood for latkes again. This time, I made them zucchini as well:)
Simply follow the potato latke recipe but substitute 1 cup of frozen hash browns with grated zucchini. I served them with a fresh batch of the sauce from the oh, so yummy Cauliflower Potpie, a homemade bell pepper salsa (bottom), spinach salad, and sliced apple:)
Bell Pepper Salsa
1/2 c. red bell pepper (chopped)
1 c. green peas
2 large clove garlic, minced
Fresh basil, chiffonade
Mix all ingredients and spoon over potato latkes. Enjoy!
